Your Order

After the "hanging" process, Mike, our Butcher, trims, and de-bones the meat and then cuts the meat to our specifications. He is a Master Butcher and does a really excellent job in the presentation of the cuts of meat. As a result of feedback, our beef is matured for over 3 weeks these days the actual period depending on a range of factors such as size, level of fat on the meat and even, the sex of the original animal

The meat is then "Vaccy Packed" in a manner that allows us to be able to split the meat into 4 equal "Family Packs". Each Pack contains a balance of best Grilling Steaks, Braising Steak, Premier Roasting Joints, Slow Roast joints, Stewing Steak and Mince. The individual packs with the different cuts require splitting up prior to freezing to suit your needs. One customer may use 10lbs of mince at a time, another will use 1/2lb for a light supper!

If a Customer has a specific requirement in cuts or size of cuts, we will do our best to accommodate their wishes. Please call us and discuss your needs. Sadly, we cannot supply an order consisting entirely of Sirloin and Fillet Steaks!

Weights of the Family Packs do vary, depending on the size of the original animal. Average weight is usually around 25Kg or 55lbs of meat. This will fit into an area of a drawer and a half in a modern, upright freezer. If you want to share your Family Pack with a neighbour or friend, it is possibly worth your while having a "bigger" Pack from a larger animal. This could be up to 32Kg or 70lbs in weight, or even more on rare occasions! This larger size also gives much bigger joints which can be either cut to suit or saved for a family treat! It is also more suited for catering packs

At the time of writing (Sept 2006) we are selling a pack inclusive of the vaccy pack materials, at the rate of approx £6.80/Kg or £3.10/lb. This we feel is excellent value and compared to similar quality beef from other Farms, a bargain! I am having to increase the costs following the major changes made to the support system for Farming within the UK which has led to a major reduction in the payments needed to maintain profitability and thus to keep on producing Dexters!

To meet guidelines given to us by the local Authority we are regrettably, unable to deliver our Dexter Beef to you directly, as the cost of refrigerated transport would be out of all proportion to our small production. Therefore, we can only supply to Customers who can call and collect from us. However, arrangements can be made for a carrier delivery in some instances. Please call or email to discuss this further.

To Order. Please mail or call us if you cannot make it to "The Wickets" and we can discuss alternative arrangements. I am sometimes able to get someone to drop off your beef directly or I make a trip to London about 6-7 times a year with Dexter beef and I can also arrabge to meet customers on the way down on occasions! Just ask...

We produce only a limited number of animals each year and numbers are restricted! Therefore, we have set up an Order List for our Dexter Beef. The list is posted here on the Web site showing where you are! Please understand, that as a result of demand, there may well be a wait of some time! When you order, please let us know what size you are likely to want so that we can allocate accordingly. A request of "ASAP" is taken as just that! :-)
